Spinach scrambled tofu

It is a perfect dish for hearty breakfast, lunch or dinner. Filled with proteins, iron and calcium.

Serves:2

Ingredients:

300 grams natural tofu
2 tbsp. nutritional yeast
1 tsp.  turmeric
1 tsp. cayenne pepper
1 tsp. black salt
2 tbsp. Tamari
1 onion
100 grams baby spinach or normal spinach

Step by step:

  1. Place the tofu into a bowl
  2. With your fingers, scramble the tofu into small pieces
  3. Add all the spices
  4. Let it marinate until the onion is sautéed
  5. Cut the onion into small cubes
  6. Heat up a frying pan and add some oil
  7. Add cut onion, sprinkle it with a pinch of salt and sauté until translucent – golden color (5 to 10 minutes)
  8. Add marinated scrambled tofu into fried onion
  9. Fry it for about 5 minutes; mix it from time to time
  10. Reduce the heat to minimum and add spinach*
  11. Fry it until the spinach is wilted and well combined with the scrabbled tofu
  12. Serve it with fresh tomatoes.

*If you use baby spinach there is no need to cut it or wash it but if you go for regular spinach bought per weight, wash it and chop it into smaller pieces.
