Potato-Zucchini Patties (EN)
To make these Potato-Zucchini Patties you need only two ingredients! It is easy (fries and bakes excellent), inexpensive (seasonal ingredients!) and simply good! You will find the step by step instruction with the pictures below. Serves: 20 + patties
Ingredients:
5-6 average size potatoes
1 bigger zucchini
Gluten free breadcrumbs or normal
2 tsp. garlic powder
2 tsp. granulated onions
½ tsp. nutmeg
1 tsp. salt
½ – 1 tsp. black pepper
Step by step:
1. Peel the potatoes and cook until soft. Then, press through potato ricer, and let it cool.
2. While potatoes are cooking, shred zucchini on a bigger wholes, sprinkle it with salt and let it rest until the potatoes are cooked. Then, squeeze the water from zucchini.
3. Combine all the ingredients in a bowl. Its consistency will be soft – that is all right!

4. Form patties in your favourite size (smaller and average in size will fry or bake faster and better), and coat each one of them in the breadcrumbs. They will be quite soft so just be gentle and patient with it.
5. To fry them, heat up a non-stick pan and add a bit of oil. Fry them on both sides until golden-brown color. They will be crunchy outside and soft inside – my favourite!
6. To bake them, place them on a silicone mat and then into preheated oven to 200°C. Bake it for 40 minutes (after 20 minutes flip them). They will be more “cooked” but less crunchy than when you fry them. You may as well pan fry them just for few seconds after the baking time is over. On the picture below, the patties on the left were pan fried just for few second after being baked, and those on the right were just baked.
Eat with a bun (like a burger) or with rice and fresh veggies!
