Green burgers

Serves: 8 burgers

Difficulty: easy

Ingredients:

250 grams fresh spinach
110 grams gluten-free breadcrumbs
2 onions
100 grams Violife vegan pizza cheese
egg replacer: 20 grams/ 2,5 tbsp.  grind flaxseeds and 125 ml/ 10 tbs of hot water
2 tbsp canola oil
5 tbsp corn flour or coarsely ground cornmeal
Salt
¼ tsp nutmeg

Step by step:

  1. Chop the fresh spinach into very small pieces.
  2. Chop onions into small pieces and fry them on 1 tbsp. of oil until translucent and soft. About 5 – 10 minutes. Let them cool down.
  3. Cover flax seeds with hot water, let it rest for 5 minutes and blend it.
  4. In a bowl, add spinach, onions, bread crumbs, cheese, flaxseeds „egg”. Mix it with your hands until you can form burgers. It takes approx. 5 to 10 minutes. At first the mixture does not hold together but the more you squeeze it and mix it with your hands the more it holds together.
  5. Divide it into 8 pieces and coat each in flour. You can either fry it on the pan with remaining oil or bake it in 200 °C, for 20 minutes on each side. If you bake it you do not need to coat them in flour.
  6. You can also freeze them before frying or baking. Just make sure they are separated with the parchment paper before you put them into the freezer. After that just allow them to defrost for 1h (when you place them to the oven they can still have some ice on them – that is all right) and put them to preheated oven to 200°C and bake until beautifully brown on both side. About 20 minutes total. Just turn them on the other side when you see they became brown on the top and you see you can easily flip them. I definitely prefer them baked than fried.
  7. Serve it in a bun with fresh tomato, paprika and the sauce of your choice, here I used good quality ketchup. Or grab one in your hands when cool and enjoy it just like that 🙂
