What to do from carrot pulp?

Indian carrot halva

Ingredients:

½ cup/ 100 gr cashews
½ cup/ 120 gr raisins
580 gr (around 12 medium size carrots) carrot pulp
30 gr coconut shred
¼ tsp turmeric
½ tsp ginger
½ tsp christmas cookie spice
1 tsp cinnamon
Rice milk (any plant based milk) – just enough to cover all the ingredients in a cooking pot

Step by step:

  1. Soak cashews and raisins in water overnight or in  warm water for approx. 30 min
  2. In a pot add carrot pulp and all remaining ingredients except milk
  3. Pour over the ingredients just enough milk so they are wet but not swimming in it – the consistency has to be thick but moist (as shown on the video above)
  4. Bring it to simmer and cook on low-medium heat for approx. 15 to 20 min. Stir it from time time.
  5. Eat it warm or cold. It keeps well in the fridge up to 7 days.
  6. Psst: Just before eating, drizzle it with agave syrup for extra pleasure!
