Tapioca Pudding w/ Cherries & Redcurrants

 

 

Serves: 3 BIG ice-cream glasses or 6 normal

Ingredients:

  • 750 gr cherries
  • 175 gr redcurrants
  • 1/2 cup tapioca pearls
  • 600 ml rice-coconut milk or plant based milk of your choice
  • 3 tbsp. chia seeds

Step by step:

Part 1:

Tapioca Pudding:

  1. Soak the tapioca pearls in plain water for 30 min, and then rinse it.
  2. Put soaked and rinsed tapioca pearls into a pot.
  3. Cover it with the plant based milk, tapioca should freely swim in the liquid (approx. 400 ml), will add remaining milk as we cook.
  4. Bring it to a simmer on a medium high heat and stir continuously.
  5. When tapioca becomes thick, add remaining milk.
  6. Have it simmering, and stir continuously.
  7. Add sweetener of your choice, here  Agave syrup is used, use the amount to your liking.
  8. The tapioca pudding is ready, when all pearls are translucent and they formed pudding, which is around 20 to25 minute mark.
  9. Turn off the heat.
  10. Pour it into your favorite glasses and let it cool, then refrigerate.

Part 2:

Cherry – Redcurrant Topping

  1. Wash redcurrants and remove their strings, keeping just the fruits.
  2. Wash and pit the cherries.
  3. Place them in to a food processor.
  4. Add Agave syrup, around 4 tbsp, adjust it to your liking. You can use other sweetener of your choice.
  5. Pulse it 3 to 4 times. Fruits should be broke down into pieces not a puree.
  6. Pour processed fruits into a bowl.
  7. Add 3 tbsp chia seeds, and mix it well.
  8. Let it rest in the fridge  until it reaches jelly like consistency, about 1 hour. With longer resting time, it will become thicker. Therefore, if you like your fruits in this dessert to be more like a jelly,  leave them mixed with chia seeds in the fridge overnight. In case a compote consistency is your choice, 1 hour in the fridge is sufficient (as in this video).

Assembling  the Tapioca Pudding w/ Cherries&Redcurrants

  1. Take out tapioca pudding and fruits from the fridge.
  2. Pour the fruits on to the tapioca pudding.
  3. Decorate it with few green leaves of lemon grass, or mint.
  4. Serve immediately or store it in the fridge.

NOTE1: This dessert is very versatile. You can eat tapioca pudding warm, or cold. You can eat it itself, or with any topping that you like, for example: strawberries, blueberries, mango puree, or chocolate sauce.

NOTE2: If  you do not have a food processor, chop the fruits with a knife and mash them with a fork. Mix them with a sweetener and leave it until they release juice.
