Grill kebab toasts

Ingredients:

  • 100 grams dried soy meat
  • 2 bay leaves
  • 2 allspice berries
  • 4 tbsp. tamari
  • 1 tsp. molasses
  • 1/2 cup homemade BBQ sauce (recipe with video -> link)
  • GF (gluten-free) toast bread
  • 4 cloves garlic (minced)
  • 1 bunch fresh parsley (washed and chopped)
  • 3 tbsp. extra virgin olive
  • Himalayan salt

Step by step:

1. In a pot add enough water to cover dried soy meat and add bay leaves, allspice berries, 2 tbsp. tamari and 1 tsp. of Himalayan salt. Bring the water to boil and add dried soy meat. Reduce the heat to medium and cook uncovered until soft.

2. Allow cooked soy meat to cool down and tear into uneven stripes. Press out any excessive water from them.

3. In a bowl mix soy stripes with the BBQ sauce, 1tbsp. olive oil, 2 tbsp. tamari and 1 tsp. molasses. Mix it throughly. Cover the box with marinated kebab and refrigerate overnight.

4. Just before grilling the kebab prepare the garlic bread. Mix the minced garlic with a pinch of salt and 2 tbsp. of olive oil. Take as many pieces of toast bread as you plan to eat and spread garlic oil on one side of each toast.

5. Take out the marinated kebab from the fridge. Grill it until the sauce evaporates and the kebab becomes golden brown with some crispy parts. If you use gas grill, grill it with a high temprature, around 250°C for approx. 20-25 minutes. Use an aluminium plate or special metal plate for grilling. Heat it up, add some high smoking point oil and then add kebab on it. It is important that you mix the kebab on the plate from time to time to ensure even grilling and avoid burning.

6. Once the kebab is grilled or just towards the end, put the garlic toast on the grill and grill it on one or both sides as you like it.

7. To assmeble the grill kebab toast, put some kebab on the garlic toast and sprinkle with freshly chopped parsley. Eat right away.
