“Egg” paste with curry

Serves: small breakfast bowl
Total time: 5 minutes
Difficulty: super easy

Ingredients:

180 grams natural tofu
3 tbsp. vegan mayonnaise
1 tsp. mustard
1 tsp. black salt (Kala Namak) – crucial in this recipe as it gives egg taste
1/2 tsp. curry
1/2 tsp. agave syrup, or pinch of sugar cane
2 tbsp. chopped the green part of scallion
If you feel the need you can add salt and black pepper.

Step by step:

1. In a bowl scramble the tofu into very small pieces.
2. Add remaining ingredients (except chopped scallion – just the green part) and mix it well. You can make it in a food processor if you prefer.
3. Add  chopped scallion – just the green part and spread it on your favorite bread 🙂
