During the course you will
actively explore & apply flavor
learn the importance of salt, fat, acidity & how to use them in cooking
create vinegars and dressing by choosing the right ratio and type of oil, vinegar and herbs
describe the five tastes and experiment the umami taste
do the combination cooking methods based on what you have learned in the basic and intermediate levels
For the final assignment you will turn simple ingredients into one of the international cuisine just by playing with the combination cooking methods, herbs and spices.
After the course you will:
know how to use & cook with herbs
know how and when to use spices
understand & be able to use combination cooking methods
balance a dish by using elements of salt, fat, acid, sweeteners, herbs & spices
In this course it is crucial that you focus your attention to tasting and experiencing flavor in a very direct and mindful way. Many people eat and taste food without ever thinking much about the experience of it – how it made them feel, and how flavors combine, layer, or build.
